So, the girls have been begging me to make muffins. With the whirlwind of December it has literally been on the back burner. One day we’d hit up Trader Joes to get the mix, the next we’d be out of butter. Same shit different day. I feel like DAYS went on and on and well we finally got our shit together and made some DELISH semi-homemade mini muffins and the kids were elated.
Normally when we do muffins, we do the regular sized ones but before I know it, they’re all gone. Like all gone before days end. So since this was such an anticipated event, I decided to make minis and make two batches. YOLO. It was probably a good thing because the girls and I probably ate 17 before the boys even got home from their day.
Let’s get started- two boxes of the Trader Joe’s banana bread mix, 4 eggs, coconut oil (butter substitute), cinnamon, vanilla extract, cooking spray & the mini muffin silicone trays. Preheat the oven to 325 and get busy.
